It is a cheese of great value, characterized by a complex, robust and extraordinarily intense flavor. During the four years of aging, it develops strong notes of spices, dried fruit, and an accentuated sapidity with a slight spicy aftertaste. Its paste is extremely grainy and crumbly, with a darker amber color compared to younger ages. Ideal to be enjoyed alone, accompanied by balsamic vinegar, honey or mustard, it is also perfect as a condiment for refined dishes, where it gives depth and character.
